These pizza scones are quick, kid‑approved, and perfect for lunches or snacks. You can easily swap in ham and cheddar for a different twist.

Ingredients

1 1/2 cups whole wheat flour
1/2 cup white flour
1 tbsp baking powder
2 tsp sugar
3 tbsp margarine or butter
3/4 cup buttermilk
2 large egg whites
About 1 cup diced pepperoni (small cubes, not slices)
About 1 cup shredded mozzarella cheese
Pizza sauce, for brushing

Directions

Preheat oven to 400°F (200°C). Lightly spray a baking sheet with cooking spray.
In a bowl, mix whole wheat flour, white flour, baking powder, and sugar.
Cut in margarine or butter until the mixture resembles coarse crumbs.
Whisk buttermilk and egg whites together, then add to dry ingredients and stir just until combined.
Fold in pepperoni and mozzarella.
Turn dough out onto a lightly floured surface, knead gently about 4 times, and shape into a flat round disk.
Cut into wedges (like a pizza) but keep pieces together as a circle, or cut on the prepared baking sheet.
Transfer to the baking sheet if needed. Brush tops lightly with pizza sauce and, if desired, sprinkle a little extra mozzarella on top.
Bake about 20 minutes, until golden and cooked through.

These are excellent warm from the oven and also pack well once cooled.

Amazing Alfredo Sauce

This Amazing Alfredo Sauce is rich, creamy, and very simple, as long as you use real ingredients. It’s a fantastic base on its own or dressed up with pancetta, ham, or prosciutto.

Ingredients

1 cup heavy cream (whipping cream)
2 to 2 1/2 cups freshly grated Parmesan cheese
1 stick unsalted butter (1/2 cup)
2 tbsp chopped garlic (jarred minced garlic works well)
Salt and freshly ground black pepper, to taste
Fresh chopped parsley, for garnish

Do not substitute half-and-half for cream or margarine for butter—if you’re going to indulge, do it properly!

Directions

In a medium saucepan, melt the butter over low heat.
Add the garlic, then slowly pour in the cream, stirring constantly. Increase the heat slightly and bring just to a gentle boil, stirring all the time.
Let the mixture reduce a little (about 2 minutes).
Slowly add the Parmesan cheese, stirring until fully melted and smooth.
Reduce the heat and let the sauce simmer a few minutes until slightly thickened. Season with salt and pepper to taste.
Pour over your favorite pasta and garnish with fresh parsley.

Variations:

For pancetta or prosciutto: Heat 1 tbsp olive oil in a skillet, sauté diced pancetta until cooked and a bit crispy, then stir into the finished sauce.
For diced ham: Add directly to the finished sauce and heat through.
Try this sauce over seafood medallions, cheese ravioli, or tossed with penne/linguine and some steamed broccoli or peas.

Ingredients

Meat

1 1/2 lb pork tenderloin, butterflied

Cranberry Stuffing

2/3 cup dried cranberries
1/3 cup toasted walnuts
1/2 tsp cinnamon
Pinch of ground cloves
2 tsp walnut or olive oil
1 oz brie, diced

Orange Glaze

2 tbsp orange juice concentrate
2 tbsp red or black currant jelly
1 tsp balsamic vinegar
1 tsp olive oil
1 tsp orange zest
1/2 tsp finely chopped garlic

Garnish (optional)

3 tbsp chopped fresh parsley

Directions

Preheat the oven to 375°F (190°C). Line a baking sheet with foil and lightly coat with cooking spray.
Make the stuffing: In a small food processor, combine cranberries, walnuts, cinnamon, cloves, and oil. Pulse until crumbly. Add diced brie and pulse once or twice more, or stir together by hand.
Butterfly the pork tenderloin (pound to about 1/4–1/2 inch thick if desired), spread the stuffing down the center, then roll and secure with kitchen string or toothpicks.
Sear and roast: Lightly oil a large skillet, sear the pork on all sides for 2–3 minutes per side until browned, then transfer to the baking sheet and bake about 20 minutes, until it reaches 145°F (63°C) internally. Rest 10 minutes before slicing.
Make the glaze: In a small saucepan, combine orange juice concentrate, jelly, vinegar, olive oil, orange zest, and garlic. Heat over medium 1–2 minutes until melted and combined.
Serve: Slice the pork, drizzle with a small amount of glaze (it’s quite strong), and sprinkle with parsley.

Serve with about 1/2 cup rice and steamed asparagus for a complete, lighter meal.

Ingredients

6–8 chicken thighs or drumsticks (bone-in or boneless)
1 cup reduced-sodium soy sauce
1 cup ketchup
3 teaspoons minced garlic
1/2 cup honey
1 teaspoon dried basil (optional)
1 tablespoon cornstarch (for thickening, optional)

Directions

Prep the sauce: In a small bowl, whisk together soy sauce, ketchup, garlic, honey, and basil until well blended.
Add to slow cooker: Place chicken pieces in the slow cooker and pour the honey-garlic mixture evenly over top.

Classic Comforting Beef Stew

This slow-simmered beef stew is a timeless family favorite. Rich, hearty, and packed with tender vegetables, it’s the perfect comfort food for cold days or cozy Sunday dinners. Simple ingredients, deep flavor, and satisfying every time.

Ingredients

3 lb (1.5 kg) stewing beef, cut into 1½-inch cubes
Salt and pepper, to taste
Vegetable oil
1 large onion, peeled and halved
4 garlic cloves, peeled and crushed
3 tbsp tomato paste
¼ cup all-purpose flour
½ cup red wine
2 cups beef or chicken broth
2 cups water
2 fresh thyme sprigs
2 bay leaves
4 large carrots, peeled and cut into 1-inch pieces
1½ lb yellow baby potatoes
1 lb cipollini or pearl onions, peeled
Chopped parsley, to taste

Directions

Season the beef generously with salt and pepper.
In a large pot over medium heat, brown the beef in oil on all sides, working in batches. Set aside.
In the same pot, add the onion and garlic. Cover and cook on low heat for 4–5 minutes, until softened.
Stir in the tomato paste and cook for 2 minutes.
Return the beef to the pot, sprinkle with flour, and stir well.
Add the wine, broth, water, thyme, and bay leaves. Bring to a boil, then cover.
Simmer gently for 90 minutes on the stovetop or in the oven at 325°F (165°C). Remove the onion halves.
Add the carrots, potatoes, and pearl onions. Cook for another 60 minutes, until the meat is tender.
Serve hot, garnished with chopped parsley.

Roasted Butternut Squash Soup

Introduction: Rich, velvety, and made without cream, this butternut squash soup highlights the natural sweetness of roasted squash. Perfect for cool-weather nights or holiday menus, it’s simple yet full of flavor.

Ingredients:

1 large butternut squash (about 3 lb), halved and seeds removed
1 Tbsp olive oil + extra for drizzling
½ cup chopped shallot (≈ 1 large shallot bulb)
1 tsp salt
4 garlic cloves, minced or pressed
1 tsp maple syrup
⅛ tsp ground nutmeg
Freshly ground black pepper, to taste
3–4 cups vegetable broth (24–32 oz)
1–2 Tbsp butter (or olive oil for dairy-free)

Instructions:

Preheat oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper. Place squash halves cut-side down, drizzle with olive oil, sprinkle with salt & pepper. Roast 40–50 mins until tender and golden. Cool ~10 mins.
In a large soup pot over medium heat, warm 1 Tbsp olive oil. Add chopped shallot and 1 tsp salt; sauté 3–4 mins until softened. Add garlic, cook 1 min until fragrant.
Scoop squash flesh into a blender (discard skin). Add maple syrup, nutmeg, black pepper, and 3 cups broth. Blend until creamy. Add remaining broth if too thick, stir in butter or olive oil.
Pour back into pot to reheat, adjust seasoning with salt & pepper. Serve hot, optionally garnished with toasted pepitas or extra black pepper.

Final Thoughts: This soup balances cozy and refined without heavy cream. Great as a vegetarian main or comforting side, leftovers taste even better the next day. Freeze-friendly and easy to customize with garnish or flavor tweaks.
