  • 3 tablespoons olive oil (divided)

  • 1 lb cubed beef stew meat

  • 3 slices bacon, chopped

  • 1 white onion, chopped

  • 1 carrot, chopped

  • 1/3 lb crimini mushrooms, sliced

  • 1 stalk celery, chopped

  • 1 garlic clove, crushed

  • 1 1/2 tablespoons all-purpose flour

  • 1 cup Irish stout beer (such as Guinness)

  • 1 1/4 cups beef stock

  • 1/2 teaspoon thyme

  • 2 bay leaves

  • 1/2 teaspoon cornstarch (optional, for thickening)

  • 1 teaspoon water (to mix with cornstarch)

  • 1 teaspoon Worcestershire sauce

  • Salt and pepper to taste

For the Crust

  • 1 sheet frozen puff pastry, thawed

  • 1 egg, beaten

Step 1: Sear the Beef

  • Heat 2 tablespoons of olive oil in a large pot over medium heat.

  • Add the beef stew meat and brown it on all sides, about 10 minutes. Remove the beef and set it aside.

  • Heat the remaining 1 tablespoon of olive oil in the same pot.

  • Cook the chopped bacon until it begins to brown, then stir in the onion, carrot, mushrooms, celery, garlic, and a pinch of sugar.

  • Sprinkle the flour over the vegetables and stir until it’s fully incorporated.

  • Add the thyme, bay leaves, and the reserved beef. Cover the pot and bring the mixture to a boil, then reduce the heat to a simmer.

  • Cook for 1 hour and 15 minutes, stirring occasionally, until the beef is tender.

  • Remove the lid and increase the heat to medium.

  • Let the stew boil gently for about 15 minutes to thicken slightly.

  • If needed, mix cornstarch with water and stir it into the stew. Simmer for an additional 30 minutes.

  • Remove from heat and discard the bay leaves.

  • Preheat your oven to 350°F (175°C).

  • Spoon the beef and mushroom filling into a 9-inch pie dish.

  • Roll out the thawed puff pastry into a circle large enough to cover the dish (approximately 10 inches).

  • Lay the pastry over the filling, trimming any excess, and crimp the edges with a fork to seal. Cut two small steam vents into the top of the pastry.

Step 6: Bake the Pie

  • Brush the top of the puff pastry with beaten egg for a golden finish.
